Russian sponge cake dessert

Ingredients for 4 servings:

  • ½ cake base (sponge cake), homemade or bought
  • 1 pack of pudding powder, chocolate
  • ½ liter of milk
  • Sugar
  • 1 tbsp cocoa powder
  • 2 tbsp powdered sugar
  • 2 dl sweet cream (whipped cream)
  • 2 tbsp sugar
  • ½ dl rum
  • 300 g compote (sour cherry or sour cherry), drained, pitted

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Layered dessert with sponge cake, chocolate pudding, cream and cherries

Prepare the chocolate pudding according to the package instructions, but mix the extra cocoa powder into the pudding mix first. Let the pudding cool, or better yet, prepare it the day before. Tear or cut the sponge cake or cake base into approximately 3 x 3 cm pieces. Whip the cream with the included icing sugar until stiff peaks form. In a large glass bowl, place a layer of sponge cake (or cake base) and drizzle with rum. Spread a layer of pudding over the top. Scatter some cherries over the top. Spread a layer of whipped cream over the top. Continue layering until all the ingredients are used up or the bowl is full. The last layer should be whipped cream. Decorate with cherries and refrigerate for at least 6 hours. This dessert should not be turned out when serving, but rather portioned out with a large spoon.
