Rustic baked apple compote

Ingredients for 2 servings:

  • 4 large apples, preferably Boskoop
  • ⅛ liter apple juice
  • 1 tbsp almond liqueur
  • 1 tsp almond butter
  • 1 tbsp raw cane sugar
  • 2 tbsp raisins
  • ½ tsp gingerbread spice (cinnamon, vanilla, ginger, cardamom, clove)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Wash the apples, remove the cores, and dice them. Bring the apple juice to a boil with the almond liqueur or almond butter. Add the raisins and sugar, then the apples and sprinkle with the gingerbread spice. Reduce the heat, stir, and simmer on low heat with the lid partially closed until the liquid reduces. This takes about 40-60 minutes. Serve with semolina pudding, quark casserole, or vanilla ice cream.
