Rustic Meatloaf from Dad

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 onion(s), chopped
  • 1 roll, from the day before
  • 150 g smoked bacon
  • Salt
  • pepper
  • breadcrumbs
  • Oil, neutral

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Soak the bread roll in water. Cut the bacon into thin strips and finely chop the onion. Place the minced meat in a bowl. Add the onion and the well-squeezed bread roll and mix everything well. Then add the bacon strips and mix well. If the meat mixture doesn’t yet have the right consistency, simply add a few breadcrumbs. Season generously with salt and pepper. Grease a suitable baking dish with a little oil or margarine/butter and shape the minced meat into a loaf. Place the loaf in the dish and bake in a preheated oven at 200°C for about 1 hour (this varies depending on the oven. Be sure to check that the meat is cooked through). The roast should have a nice crust. This crust is crispy and flavorful. I serve it with bread dumplings and a peppercorn sauce. I add onion and mushrooms as a side dish (in my recipe).
