Ingredients for 4 servings:

  • 750 g potatoes, mainly waxy
  • 450 g Lyoner
  • 125 g vegetable onions
  • ½ bunch of spring onions
  • salt and pepper
  • Fat for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

Cook the potatoes in their jacket potatoes until al dente, peel, slice, and season lightly with salt. Cut the Lyoner sausages into approximately 1 cm wide slices. Thinly slice the onions. Cut the spring onions into small rings. Fry the potato slices on one side in a lightly greased, uncovered pan for approximately 5 minutes. Turn the potato slices over and add the Lyoner sausage slices. Cover the pan and continue cooking at medium heat. After 10 minutes, add the onions, stir, and cover the pan again. After another 5 minutes, turn everything over and reduce the heat. Cover and let the dish rest for another 3-5 minutes. Finally, season with pepper to taste. Sprinkle with the spring onions just before serving. Serve with a cool white wine or a cold beer.
