Ingredients for 4 servings:

  • 3 chicken breast fillets
  • 2 tbsp flour
  • 2 egg yolks
  • 120 ml cream
  • 4 tbsp flour
  • 300 ml milk
  • 120 g cheese, e.g. Cheddar/grated
  • 2 red chili peppers
  • 100 ml broth
  • 200 g cornflakes
  • Clarified butter, for frying

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

SABOs – Crispy chicken strips with spicy cheese sauce

Halve the chicken breasts to create two smaller breasts. Flatten the chicken breasts and cut into strips. Mix the egg yolks, cream, and 4 tablespoons of flour and let stand for 1 hour. Coat the chicken strips first in 2 tablespoons of flour, then in the batter, and finally in the cornflakes. Place in the freezer for 2 hours. Roughly chop the chilies and sauté in stock until soft. Briefly bring the milk to a boil, stir in the cheese and butter, and remove from the heat. Stir in the chilies. Fry the chicken strips in hot clarified butter until golden brown and crispy. Drain the strips on kitchen paper. Serve the chicken strips with the sauce.
