Sago with honeydew melon

Ingredients for 6 servings:

  • 150 g sago
  • 500 ml coconut milk
  • 250 g sugar
  • ½ honeydew melon(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

First, let the sago soak in the water for 30 minutes. Then drain the water and boil the sago in the water until the pearls are transparent. Juice half of the melon, and cut the other half into small pieces. Boil the sugar in 1/8 l of water until it becomes a syrup. When the sago pearls are transparent, strain the water through a fine sieve and rinse the pearls with cold water. Then mix the syrup, juice, and coconut milk with the sago pearls and bring to a boil again. Then pour into a bowl and add the melon pieces. Let cool. It tastes best served ice-cold, like a good Asian dish.
