Ingredients for 2 servings:

  • 1 handful of mung bean sprouts
  • 1 tomato(s)
  • 1 nectarine(s)
  • 1 apple (corn or clear apple), white
  • ½ cucumber(s)
  • 100 g feta cheese
  • Mirabelle plums, wild
  • 1 handful of peanuts
  • 1 tbsp ketchup or sweet and sour sauce
  • 2 tbsp balsamic vinegar
  • 5 tbsp, heaped olive oil
  • Coconut blossom sugar
  • Cayenne pepper
  • pepper, black

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

best in summer

Dice the tomato, nectarine, cucumber, apple, and feta cheese. Place them in a bowl with the sprouts and, if using, the mirabelle plums. Sprinkle with the peanuts. Mix the remaining ingredients into a sauce and pour it over the salad. Tastes great with fried tofu.
