Ingredients for 2 servings:
- 1 handful of mung bean sprouts
- 1 tomato(s)
- 1 nectarine(s)
- 1 apple (corn or clear apple), white
- ½ cucumber(s)
- 100 g feta cheese
- Mirabelle plums, wild
- 1 handful of peanuts
- 1 tbsp ketchup or sweet and sour sauce
- 2 tbsp balsamic vinegar
- 5 tbsp, heaped olive oil
- Coconut blossom sugar
- Cayenne pepper
- pepper, black
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
best in summer
Dice the tomato, nectarine, cucumber, apple, and feta cheese. Place them in a bowl with the sprouts and, if using, the mirabelle plums. Sprinkle with the peanuts. Mix the remaining ingredients into a sauce and pour it over the salad. Tastes great with fried tofu.
