Salads: Asparagus Salad with Fresh Mango

Ingredients
 

  • 5 Fresh asparagus
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 Butter, small
  • 1 Freshly diced mango
  • 30 ml White balsamic vinegar
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tsp Sugar

Instructions
 

  • Peel the asparagus, remove the woody ends and cut into pieces approx. 2 cm long. Pepper and salt the water, add a small piece of butter, add the asparagus, bring to the boil, cover and switch off the stove. The asparagus will be soft in a few minutes.
  • Peel the mango and cut into small cubes.
  • Mix the balsamic vinegar with pepper, salt and sugar and bring to the boil. Reduce until it has become viscous.
  • Now arrange the cooled pieces of asparagus on a plate, place the mango cubes on top and drizzle with the reduced balsamic vinegar.
