Salads: Asparagus Salad with Fresh Mango

- 5 Poles Fresh asparagus
- 1 pinch Salt
- 1 pinch Pepper
- 1 piece Butter, small
- 1 piece Freshly diced mango
- 30 ml White balsamic vinegar
- 1 pinch Salt
- 1 pinch Pepper
- 1 teaspoon Sugar
- Peel the asparagus, remove the woody ends and cut into pieces approx. 2 cm long. Pepper and salt the water, add a small piece of butter, add the asparagus, bring to the boil, cover and switch off the stove. The asparagus will be soft in a few minutes.
- Peel the mango and cut into small cubes.
- Mix the balsamic vinegar with pepper, salt and sugar and bring to the boil. Reduce until it has become viscous.
- Now arrange the cooled pieces of asparagus on a plate, place the mango cubes on top and drizzle with the reduced balsamic vinegar.
