Salads: Asparagus Salad with Fresh Mango

  • 5 Poles Fresh asparagus
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 piece Butter, small
  • 1 piece Freshly diced mango
  • 30 ml White balsamic vinegar
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 teaspoon Sugar
  1. Peel the asparagus, remove the woody ends and cut into pieces approx. 2 cm long. Pepper and salt the water, add a small piece of butter, add the asparagus, bring to the boil, cover and switch off the stove. The asparagus will be soft in a few minutes.
  2. Peel the mango and cut into small cubes.
  3. Mix the balsamic vinegar with pepper, salt and sugar and bring to the boil. Reduce until it has become viscous.
  4. Now arrange the cooled pieces of asparagus on a plate, place the mango cubes on top and drizzle with the reduced balsamic vinegar.
