Ingredients for 2 servings:
- 1 large avocado(s)
- ½ lemon(s)
- 2 eggs
- 2 slices of smoked salmon
- 1 small onion(s)
- a few stalks of parsley
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Preheat the oven to 200°C (top/bottom heat). Halve and pit the avocado. Remove about 2 tablespoons of flesh from each half. Drizzle the cut surfaces with lemon juice. Place the avocado halves in a baking dish, season with salt and pepper. Line each cavity with a slice of salmon, pressing it down lightly. Crack one egg into each half and drop it into the avocado half. Bake in the oven for about 20 minutes, until the white is set but the yolk is still slightly soft. Meanwhile, peel and slice the onion (you can also use one red onion if you like). Finely chop the parsley and mix it with the onion. Before serving, sprinkle the avocado again with coarsely ground pepper and spread the onion and parsley mixture on top.
