Salmon Fillet in Foil

Ingredients
 

  • 350 g Salmon fillet
  • 1 small Leek
  • 100 g Mushrooms or Egerlinge
  • 5 piece Cocktail tomatoes or 1 tomato
  • 1 teaspoon Lemon juice
  • 3 Branches Thyme
  • 1 teaspoon Olive oil
  • Salt, pepper, aluminum foil

Instructions
 

  • Wash the salmon fillet, pat dry and cut into two or four roughly equal pieces
  • Wash the leeks and cut into rings as fine as possible, also cut the mushrooms into very fine slices.
  • Halve or quarter the cocktail tomatoes (depending on size). Pluck the thyme leaves, mix with the mushrooms, leek and lemon juice, lightly salt. Pepper and salt the fish fillets.
  • Brush two double sheets of aluminum foil in the middle with a little olive oil, put the salmon fillets on top, cover with the vegetable mixture and wrap in the foil so that none of the juice can run out.
  • Place the packet on the wire shelf in the middle and cook in the oven preheated to 200 degrees for about 20 to 30 minutes. The fish is done when the foil arches.
  • First open the package at the table. Jacket potatoes go well with it (85 kcal per 100gr.)
