Salmon fillet on a bed of Brussels sprouts

Ingredients for 1 servings:

  • 150 g salmon fillet(s), frozen
  • 250 g Brussels sprouts
  • 1 garlic clove(s)
  • 100 ml olive oil
  • salt and pepper
  • herbs, Italian
  • 50 ml Balsamic vinegar, white
  • e.g. tomato(s), dried

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Preheat the oven to 180 degrees fan/convection oven. Chop the Brussels sprouts (or leave them whole, depending on your preference) and arrange them in a baking dish. Crush the garlic and mix with the olive oil, herbs, and spices. Spread about half of the mixture over the Brussels sprouts. Bake for about 15 minutes, turning the sprouts occasionally. Then add the salmon to the baking dish and drizzle with the remaining oil mixture and the balsamic vinegar. Season well again. Return the dish to the oven and bake for another 15-20 minutes. After 10 minutes, add the sun-dried tomatoes to warm them up a bit.
