Salmon fillets with cheese sauce and tagliatelle pasta

Ingredients for 2 servings:

  • 2 salmon fillets, 125 – 150 g each
  • ½ bunch chives
  • 1 tbsp butter
  • 1 tbsp flour
  • 100 ml cream
  • 150 ml vegetable stock
  • 100 g cream cheese spread
  • 5 tbsp white wine
  • 1 pinch of nutmeg
  • 3 tbsp oil for frying
  • 250 g tagliatelle pasta

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Heat the butter in a small saucepan, add the flour, and sauté briefly. Remove the pan from the heat, add the broth, cream, and white wine. Add the cream cheese, mix well, then transfer to a food processor and blend until smooth. Return to the pan and bring to a boil briefly. Season with nutmeg, salt, and pepper. Finely chop the chives and add some to the hot sauce just before serving. Heat 3 tablespoons of oil in a pan and fry the salmon fillets for 2-3 minutes on each side. Cook the pasta al dente according to the package instructions. Arrange the salmon fillets and sauce on two plates and sprinkle with the remaining chives.
