Salmon on Bed of Vegetables
The perfect salmon on bed of vegetables recipe with a picture and simple step-by-step instructions.
- 2 piece Zucchini
- 2 piece Red peppers
- 2 piece Onion
- 8 piece Carrots
- 2 piece Salmon side with skin
- Salt and pepper
- Olive oil
- Wash or clean the vegetables and cut everything into slices of the same thickness with the vegetable slicer. Spread on an oiled tray, season with salt and pepper and drizzle with olive oil again. Now mix everything again and smooth it out
- Now the vegetables can be pre-cooked in the oven and on the grill. This is best to keep under control as it can vary greatly from stove to stove. When the vegetables show the first roasted tips, the salmon sides can be placed on top.
- Wash the salmon sides (we had frozen goods) and pat dry, season both sides with salt and pepper and rub with oil, now on the vegetables, with the skin side up and off in the stove ..
- Cook on the grill for approx. 7 minutes, the skin will be nice and crispy. Remove from the stove, peel off the skin and turn it over (inside up), place it back on the salmon, grill for another 7 minutes.
- Try the thickest part of the salmon to see if it is done, if so – serve.
- The skin can of course also be eaten, crispy as it is, a delicacy …
