Ingredients for 6 servings:
- 200 g smoked salmon, cut into 30 mm strips
- 2 small fennel
- 3 Nashi pears, medium-firm
- 2 bunch arugula, washed and sorted
- 1 radicchio, only the washed heart leaves
- 2 small zucchini
- 4 tbsp walnuts, slightly crushed
- 4 tbsp olive oil
- 2 tbsp lime juice
- Pepper, freshly ground black
- Sea salt
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Remove the outer leaves from the fennel bulbs, wash the bulbs, cut them into thin strips, and place them in a bowl. Wash, quarter, and deseed the nashi pears, also cut them into thin strips, and add them to the fennel. Wash the zucchini and slice it into long, thin strips using a vegetable peeler. Add to the bowl along with all the other ingredients. Mix everything well, season with salt and pepper, and serve immediately.
