Salmon trout in onion and garlic butter

Ingredients for 2 servings:

  • 2 fish(s) (salmon trout), with skin
  • 1 onion(s)
  • 2 garlic cloves
  • 1 lemon(s)
  • 1 tsp sea salt, coarse
  • some salt and pepper
  • some dill
  • ½ pack of butter
  • 1 handful of pine nuts

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash the trout and pat dry. Place in an ovenproof dish. Season inside and out with salt, pepper, and dill. Finely chop the onions and garlic and add them to a hot pan with 2/3 of the butter. After a short time, add the pine nuts and cook until they are lightly golden brown. Squeeze 1/2 lemon and add the juice with the sea salt. After another 5 minutes, remove the mixture from the pan and spread it among the salmon trout and on top. Spread the remaining butter in flakes over the trout. Now place in the oven at 200°C (fan oven) for 20 minutes. If desired, scatter the other half of the lemon over the salmon trout. Serve with potatoes.
