Salmon with almond crust

Ingredients for 4 servings:

  • 700 g salmon fillet(s)
  • 3 tbsp lemon juice
  • salt and pepper
  • 40 g clarified butter
  • 1 bunch parsley, flat
  • 80 g almond(s), chopped
  • 1 tbsp lemon(s) – zest, grated
  • 4 tbsp olive oil
  • 50 g butter
  • 3 tbsp mustard, grainy
  • 3 tbsp white wine
  • 3 tbsp cream
  • 20 g capers
  • 1 pinch(s) of sugar

Working time approx. 20 minutes; Total time approx. 20 minutes

Season the fillet with lemon juice, salt, and pepper, and fry in hot clarified butter for 1 minute per side. Chop the parsley and mix with the almonds, lemon zest, and olive oil. Place the salmon in a dish greased with olive oil and cover with the almond mixture. Bake in a preheated oven at 225°C for 10 minutes. Cream the butter, stir in the mustard. Add the wine, cream, and drained capers. Season to taste with salt, pepper, and a pinch of sugar. Serve the sauce with the salmon. Serve with roasted potatoes and lamb’s lettuce.
