Ingredients
- 250 g Lingonberry fresh
- 125 ml White wine dry
- 6 Peppercorns
- 2 Allspice grains
- 1 Cloves
- 1 tbsp Honey
- 1 tsp Food starch
Instructions
- Bring the lingonberries with the wine, spices and honey to the boil while stirring and let simmer for about 5 minutes.
- Then pass through a sieve or puree until flat in a blender, return to the saucepan and thicken the sauce with the cornstarch mixed in a little water.
- Bring to the boil again briefly, season to taste and serve hot.
- You can refine this sauce - if you like - with 1-2 tablespoons of cream or creme fraîche, especially if it is to be served with wild fowl such as pheasant or partridge.
