Ingredients
 

  • 250 g Lingonberry fresh
  • 125 ml White wine dry
  • 6 Peppercorns
  • 2 Allspice grains
  • 1 Cloves
  • 1 tbsp Honey
  • 1 tsp Food starch

Instructions
 

  • Bring the lingonberries with the wine, spices and honey to the boil while stirring and let simmer for about 5 minutes.
  • Then pass through a sieve or puree until flat in a blender, return to the saucepan and thicken the sauce with the cornstarch mixed in a little water.
  • Bring to the boil again briefly, season to taste and serve hot.
  • You can refine this sauce - if you like - with 1-2 tablespoons of cream or creme fraîche, especially if it is to be served with wild fowl such as pheasant or partridge.
