Ingredients for 1 servings:

  • 500 g tomatoes
  • 70 g chili pepper(s), red
  • 1 onion(s)
  • 2 garlic cloves or 1/2 bulb of Chinese solo garlic
  • 1 tbsp lemon juice
  • 1 tsp brown sugar
  • Salt
  • 1 tbsp clarified butter

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the tomatoes, make a cross-shaped cut across the top, and briefly blanch them in boiling water. Peel the skin and finely chop the flesh. Peel the onion and garlic, and dice both. Chop the chilies into small pieces. The seeds remain in the chili peppers and give the sambal oelek its spiciness. Heat the fat in a pot or roasting pan and sauté the onion over medium heat until translucent. Add the garlic and sauté for a further 2 minutes. Add the tomato pieces, chili pieces, and 100 ml of water. Simmer for approx. 10-15 minutes, adding a little more water if necessary and stirring occasionally to prevent burning. Add the lemon juice and season with salt and sugar. If it’s not spicy enough for you, feel free to add more chilies; I find the heat is enough.
