Ingredients for 6 servings:

  • 200 g spring onions, cut into rings
  • 1 clove(s) garlic, finely diced
  • 800 g chicken breast fillet(s), cut into bite-sized pieces
  • 350 g carrot(s), sliced
  • 600 g pumpkin flesh, in a jar, drained
  • 500 g broccoli, in small florets
  • 500 g zucchini, cut into pieces
  • 400 g tomatoes, quartered, pitted
  • 300 g bell pepper(s), pitted, quartered, diced
  • 2 liters of vegetable broth
  • 1 bay leaf
  • Parsley
  • Oil for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the spring onions and garlic in 1 tablespoon of oil. Deglaze with the broth and bring to a boil. Add the chicken and simmer for about 15 minutes (medium heat). Add the bay leaf. Add the vegetables and simmer for another 10 minutes. Season with salt and pepper to taste. Garnish with parsley. The soup can be refrigerated. Please heat in portions and eat as much as you like. It contains hardly any carbohydrates, thus keeping insulin levels low. This allows the body to draw its energy from fat stores.
