Ingredients for 2 servings:
- 4 slices of wholemeal toast
- 2 tsp mustard
- 1 red bell pepper(s)
- 1 carrot(s)
- 4 leaves of iceberg lettuce
- ½ cucumber(s)
- 200 g turkey breast slices
- 50 g Parmesan, freshly grated
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Spread mustard on all slices of toast. Trim the bell pepper and carrot and cut into long strips. Peel the cucumber and cut into equal pieces. Arrange the lettuce leaves on two slices of toast. Distribute the carrot, bell pepper, and cucumber evenly on top. Season with salt and pepper. Place the turkey breast on top and sprinkle with freshly grated Parmesan cheese. Cover with the remaining slices of toast and enjoy.
