Sandwich with salmon and herb curd

Ingredients for 4 servings:

  • 200 g low-fat curd cheese
  • 1 tbsp oil
  • 2 tbsp horseradish (cream horseradish)
  • 3 tbsp herbs
  • ½ cucumber(s)
  • 8 lettuce leaves
  • 12 slices of toast (sandwich slices)
  • 8 slices of salmon (smoked salmon)

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the quark with the oil, horseradish, and herbs, and season with salt and pepper. Wash the cucumber, halve it lengthwise, and cut into pieces. Wash, dry, and tear the lettuce leaves into pieces. Toast the bread. Spread 8 slices with quark and top with lettuce, salmon, and cucumber. Stack two slices of bread on top of each slice and place the remaining 4 slices on top. Cut the sandwiches diagonally and serve.
