Ingredients for 2 servings:
- 1 kg asparagus
- 4 eggs
- some stalks of mixed fresh herbs (parsley, chives, cress)
- 1 pinch of salt
- 1 pinch(s) of pepper
- 1 cup of yogurt (low-fat yogurt, 1% fat)
- 2 tbsp salad cream (fat-free version)

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
(Diet variant)
Peel the asparagus, cut it into small pieces, and boil it in a little water (save the asparagus water and drink it; it’s a good diuretic). Hard-boil the eggs and finely chop the herbs. Mix the herbs with the yogurt, 2 tablespoons of salad cream, and the seasoning (it should look like green sauce). Then slice the eggs and add them with the asparagus. Fresh baguette goes well with this.
