Ingredients for 1 servings:

  • 160 g honey
  • 150 g sugar
  • 1 egg yolk
  • 375 g flour
  • ½ tsp cinnamon powder
  • 1 tsp gingerbread spice
  • 5 g ammonium bicarbonate
  • 5 g potash
  • 2 tbsp milk
  • Chocolate coating, etc.

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Combine honey, 125g sugar, and 3 tablespoons of water in a saucepan and heat until the sugar has dissolved. Allow to cool again. Knead the egg yolk, remaining sugar, flour, cinnamon, and gingerbread spice into the honey mixture. Dissolve ammonium bicarbonate and potash in 1 tablespoon each of milk, pour into the dough, and knead in. Roll out the dough on a floured surface to about 1/2 cm thick and cut out 10 Santa Claus shapes. Bake at 175°C for about 20 minutes. Once cooled, decorate with chocolate; for children, you can also use colored sugar sprinkles. Tip: If you like, you can also use the dough to make gingerbread hearts, famous at fairs, by rolling out the dough thicker. You can also make cookies from the dough, then roll them out thinner and garnish with almond flakes or cherries, if desired.
