Spaghetti salad with red peppers

Ingredients for 2 servings:

  • 500 g pasta (spaghetti)
  • 2 bell peppers, red
  • 2 tbsp olive oil
  • Spice mix (Chinese spice)
  • e.g. fresh parsley, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook spaghetti al dente according to the package instructions. Wash, trim, and finely dice the bell peppers. Heat olive oil and briefly roast the bell peppers. Then sauté until almost tender. Combine the noodles and diced vegetables in a large bowl and add Chinese seasoning to taste. Mix thoroughly and let stand for about 20 minutes. Sprinkle with fresh parsley before serving.
