Sauerkraut soup with noodles

Ingredients for 6 servings:

  • 450 g pasta
  • 500 g sauerkraut
  • 400 g pork neck, cut into short thin strips
  • 3 large tomatoes
  • 3 liters of vegetable broth
  • 1 clove(s) garlic
  • 1 tbsp, heaped sugar
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp fish sauce
  • 3 tbsp tomato paste
  • 1 tbsp, leveled paprika powder
  • 2 tbsp, heaped flour
  • 1 tsp, heaped five-spice powder
  • 1 tsp, heaped ginger
  • 1 pinch of chili flakes
  • Salt
  • Oil, neutral

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Ramen with Kimchi – German Style

Peel the onion and cut into large pieces, chop or press the garlic. Toss the finely chopped meat with flour, then dice the tomatoes. Cook the pasta, reducing the cooking time by one minute. Brown the meat in a deep pan with neutral-flavored vegetable oil for about 3 minutes, then remove from the pan. Sauté the onions and garlic until lightly browned. Add the sauerkraut and cook for 5 minutes. Add all the seasonings. Add the pasta and broth to the pan (if you use instant broth, you can use the pasta water). Add the tomatoes and meat and let everything simmer gently for another 2 to 3 minutes, season to taste, then serve immediately.
