Sauerkraut with kiwi and pineapple

Ingredients for 4 servings:

  • 1 gr. can/n sauerkraut
  • 1 onion(s)
  • 1 tbsp clarified butter
  • 4 slices of pineapple
  • 2 kiwis
  • 3 tbsp crème fraîche
  • 2 bottles of sparkling wine (piccolo), dry
  • 1 bay leaf
  • 5 juniper berries
  • Salt, as needed
  • Pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the diced onion in clarified butter until translucent. Add the sauerkraut, bay leaves, and juniper berries and sauté briefly. Pour in the sparkling wine, bring to a boil, and simmer for about 20 minutes. Dice the pineapple and add to the cabbage, simmering for another 10 minutes. Finally, stir in the crème fraîche and let it reduce slightly. Stir in the peeled and diced kiwis. Do not cook, season to taste, and serve.
