Ingredients for 2 servings:
- 1 onion(s), red
- 1 celeriac
- 4 carrots
- 4 parsnips
- 3 balls of fresh beetroot
- 3 Mettwurst
- 4 tbsp olive oil
- pepper
- Thyme
- 1 cup rice
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
Cut the ingredients into small strips or slices. Cut the onion into eighths. Place everything in a baking dish, season with thyme and pepper, and drizzle with olive oil. Mix the mixture, season again, and drizzle with olive oil again. Preheat the oven and bake at 180°C for 40 minutes. Stir the mixture 2-3 times during baking. Cook the rice according to the instructions. Serve it with the baked root vegetables.
