Ingredients for 4 servings:

  • 300 g puff pastry
  • 250 g onion(s)
  • 400 g tomatoes
  • ½ bunch parsley
  • 150 g bacon (breakfast bacon), thinly sliced
  • 250 g cheese (Emmental)
  • 6 eggs
  • 125 g whipped cream
  • salt and pepper
  • 200 g bratwurst, uncooked
  • 250 g meat sausage (Lyoner), thinly sliced

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Line a 24 cm springform pan with rimmed puff pastry and pierce several times with a fork. Remove the sausage from its skin and spread it on the pastry. Peel and dice the onions. Chop the parsley, slice the tomatoes, and fry the bacon until crispy. Finely grate 100 g of cheese and slice the rest. Alternate layers of onions, cheese slices, tomatoes, sausage, and bacon in the pan. Mix the eggs, cream, parsley, and grated cheese, season, and pour over the mixture. Bake in a preheated oven at 175°C (150°C fan-assisted oven) for about 1.5 hours until golden brown. Cover with parchment paper or aluminum foil, if desired.
