Ingredients for 4 servings:
- 300 g black pudding, fresh
- 6 egg yolks
- 6 egg whites
- 3 tbsp cream, sweet
- salt and pepper
- 2 tbsp parsley, chopped
- Fat, for frying
- 8 onions, in rings
- some butter
- some flour
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Cut open the black pudding and place the insides into a bowl. Mix with the egg yolk and cream to form a batter. Season with salt and pepper. Beat the egg whites until stiff peaks form and carefully fold them into the sausage mixture along with the parsley. Heat some fat in a pan and fry into palm-sized pancakes. Keep the pancakes warm. While the pancakes are cooking, coat the onion rings in flour and fry them in hot butter until crispy. Top the pancakes with onion rings and serve with mashed potatoes.
