Ingredients for 1 servings:

  • 150 g walnuts (or other nuts of your choice)
  • 250 g flour
  • 1 tsp baking powder
  • 1 tsp, leveled baking soda
  • 3 tbsp fried onions
  • 1 tsp chili flakes
  • 3 tsp dried herbs (thyme, oregano, rosemary, basil)
  • 50 g Parmesan, grated
  • 1 tbsp salt, coarse or regular
  • 1 pinch(s) black pepper, freshly ground
  • 4 eggs

Working time approx. 20 minutes; Total time approx. 20 minutes

Cantuccini with walnut, parmesan and herbs

Roast the walnuts in a pan without fat until fragrant, let them cool and then roughly chop. Beat the eggs until frothy and gradually add the listed ingredients. Knead the mixture well. If the dough is too soft, add a little more flour. Form two dough logs, each 4 to 5 cm in diameter. Place them on a baking tray lined with baking paper, leaving enough space between them, and bake at 180° (preheated) (fan oven approx. 160°) for about 25 minutes. Let them cool slightly, then cut diagonally into 1 to 1.5 cm thick slices. Return to the baking tray and bake for another 10 minutes. Delicious hot or cold. Note: You can also use fresh, very finely chopped onions instead of the fried onions. If you like garlic, you can also add 1 or 2 very finely chopped cloves to the dough.
