Savory Meatball Skewers on Sweet and Sour Vegetables
The perfect savory meatball skewers on sweet and sour vegetables recipe with a picture and simple step-by-step instructions.
Hearty meatball skewers:
- 400 g Mixed minced meat (here: 250 g beef meat and 150 g pork meat)
- 75 g 1 Zwiebel
- 1 Knoblauchzehe
- 1 rote Chilischote
- 20 g 1 Stück Ingwer / geschält
- 1 Ei
- 4 tbsp Breadcrumbs
- 1 tsp Spice mixture meatballs & meatballs from ANKERKRAUT *)
- 1 tsp Mild curry powder
- 0,5 tsp Sambal oelek
- 3 big pinches Coarse sea salt from the mill
- 3 big pinches Colorful pepper from the mill
- 1 Cup Sunflower oil
- 4 Piece Wooden skewers
Sweet and sour vegetables:
- 150 g Mushrooms
- 150 g Pineapple pieces (from the can!)
- 150 g Chinese cabbage leaf hearts
- 100 g 1 rote Spitzpaprika
- 100 g 1 gelbe Spitzpaprika
- 75 g 1 Zwiebel
- 50 g 2 Frühlingszwiebeln
- 2 tbsp Sunflower oil
- 200 ml Pineapple juice
- 2 tbsp Tomato ketchup
- 2 tbsp Brown sugar
- 2 tbsp Light rice vinegar
- 2 tbsp Light soy sauce
- 2 tbsp Sweet soy sauce
- 2 tbsp Rice wine
- 1 tbsp Tapioca starch
- 1 tsp Glutamate / alternatively 1 teaspoon instant chicken broth

Sweet and sour vegetables:
- Clean / brush the mushrooms, remove the stems and cut into quarters. Cut the Chinese cabbage leaf hearts into small diamonds. Clean and wash the pointed peppers and cut into small diamonds. Peel the onion, cut in half and cut into small wedges / assemble apart. Clean and wash the spring onions and cut diagonally into rings. Made from pineapple juice (200 ml), tomato ketchup (2 tablespoons), brown sugar (2 tablespoons), light rice vinegar (2 tablespoons), light soy sauce (2 tablespoons), sweet soy sauce (2 tablespoons), rice wine (2 tablespoons), Mix tapioca starch (1 tbsp) and glutamate (1 teaspoon / alternatively 1 teaspoon instant chicken broth) into a sweet and sour sauce. Remove the oil except for about 2 tablespoons, heat, add the vegetables (mushroom quarters, chi-nakohl leaf hearts lozenges, pineapple pieces, pointed pepper lozenges, onion pieces and spring onion rings) and stir-fry for approx. 5 – 6 minutes. Deglaze / pour in the sweet and sour sauce and simmer until the liquid begins to thicken. Then slide the wok off the stove.
Serve:
- Thread the meatballs onto wooden skewers. Arrange the sweet and sour vegetables on plates, place the minced meat skewers on top and serve.
