Savory omelet with apple

Ingredients for 4 servings:

  • 4 eggs
  • 200 g light cream
  • 200 g cooked ham
  • 2 apples
  • 2 tbsp lemon juice
  • 1 bunch of chives
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Whisk the eggs with 50g of crème légère and season with salt and pepper. Finely chop a few chives and stir in. Heat the oil in a pan and fry 4 omelets. Let cool. Mix the remaining crème légère with the lemon juice and the remaining chives, cut into rings, and season with salt and pepper. Peel and core the apples, then cut them into very fine cubes and add them to the mixture. Top the omelets with ham and spread with the cream. Roll the omelets tightly, wrap in cling film, and refrigerate until ready to serve. I like to fry very small omelets; they make a nice appetizer or finger food. These omelets also make a great office meal.
