Ingredients for 3 servings:
- 1 vanilla pod(s)
- 120 ml milk
- 60 g butter
- 5 eggs
- 60 g flour
- 50 g sugar

Split open the vanilla pod, scrape out the seeds, and bring the contents to a boil in the milk, then discard the empty pod. Set the milk aside and gently heat the butter in the same saucepan. Separate the eggs (note: keep one egg white separately!). Whisk the flour into the butter (to make a light roux), then add the milk and the single egg white. Then gradually stir in the egg yolks. Beat the remaining 4 egg whites with the sugar until stiff peaks form; stir in 1/3 of the egg whites, then fold in the rest. Finally, add the raisins. Butter a deep baking dish, sprinkle with sugar, and pour in the batter. Bake in a slightly preheated oven at 180°C (fan-assisted) for 25-30 minutes. It is important that the dish is covered and placed in a water bath.
