Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
This is the bratwurst that won first place at the Schaumburg Grill Championship in 2007.
Mix apple juice and maple syrup. Mix powdered sugar with a little cinnamon and ground chili flakes to taste. Lightly score one side of the bratwurst with a sharp knife and grill indirectly (although a frying pan also works). At the end of the grilling/roasting time, brush with the apple juice and maple syrup mixture and let it caramelize briefly. Dust the pineapple slice with the chili and cinnamon sugar and grill briefly directly over the embers until the pineapple is caramelized. The pineapple can also be served simply sliced. Brush one side of the tortilla wrap with water, the other side with the apple juice and maple syrup mixture, and grill directly for 10 to 12 seconds on each side. Place a few arugula leaves on the grilled flatbread, then a few pieces of the grilled and sliced pineapple slices, a little honey mustard sauce, and then the whole bratwurst. Then tightly roll the tortilla flatbread up around the bratwurst. If desired, insert toothpicks into the finished roll and cut small finger food pieces out of it or simply cut the roll in half and serve.
