Schneeberg pancakes

Ingredients for 4 servings:

  • 10 g yeast
  • ¼ liter of milk
  • 1 egg(s)
  • 1 pinch of salt
  • 1 tbsp sugar
  • 150 g flour
  • 2 tbsp raisins
  • Clarified butter, for frying
  • Powdered sugar, for dusting

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Crumble the yeast and whisk with a little warm milk. Stir in the remaining milk, the egg, salt, and sugar. Stir in the flour and washed raisins. Cover and let rise in a warm place for 30 minutes. Heat a little clarified butter in a pan. Drop a tablespoon of batter into the pan and fry the pancakes until golden brown on both sides. Arrange on plates and serve dusted with powdered sugar. Compote goes best with the pancakes. If you don’t have any, jam is also delicious.
