Ingredients for 2 servings:
- 350 g pork from the topside
- 1 packet of hollandaise sauce
- 1 pack of bacon or ham cubes
- 80g Gouda
- 200 g spaetzle
- 2 eggs
- e.g. breadcrumbs
- n. B. fried onions
- e.g. parsley
- Salt and pepper, white
- some butter
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
with cheese hollandaise
Pound the schnitzel and season with salt and pepper. Then coat with flour, egg, and breadcrumbs. Set aside. For the sauce, either buy the Gouda already grated or grate or dice it yourself. Combine the hollandaise sauce and the Gouda in a small saucepan and heat gently, stirring occasionally. Do not let the sauce boil. Melt the Gouda in about 10-15 minutes. Once the cheese is completely melted, season the sauce with white pepper and salt and keep warm. Meanwhile, bring the water for the spaetzle to a boil. Add the ham cubes to a pan and fry. When they are done, transfer them to a bowl and set aside. Add a little clarified butter to the pan and fry the schnitzel. Prepare the spaetzle according to the package instructions. Drain the cooked spaetzle and stir in a little butter. Serve the spaetzle and schnitzel on the plates, sprinkle with the fried onions and ham cubes. Spread the hollandaise sauce over the schnitzel and spaetzle and garnish with parsley.
