Schnitzel with feta and zucchini topping

Ingredients for 2 servings:

  • 600 g zucchini
  • 300 g pork schnitzel
  • 1 tbsp rapeseed oil
  • Salt
  • pepper
  • 100 g light feta cheese
  • 4 tbsp spread (bruschetta spread with paprika)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash the zucchini, dry it, and finely grate it using a vegetable grater. Rinse the pork schnitzels with cold water and pat them dry with kitchen paper. Preheat the oven to 200°C (400°F). Heat the oil in a pan and sear the schnitzels over high heat for 2-3 minutes on each side. Season with salt and pepper. Place the schnitzels in an ovenproof dish. Crumble the feta cheese, mix with the grated zucchini and the bruschetta spread, add a little more salt and pepper if desired, and spread it over the schnitzels. Bake in a preheated oven (180°C fan oven) for about 20 minutes.
