Ingredients for 12 servings:

  • 500 g quark cream 0.2%
  • 250 g quark (Bavaria curd cheese, semi-skimmed)
  • 250 g sour cream
  • 250 g crème fraîche, herbs
  • 250 g cream cheese with herbs of Provence (double cream)
  • 1 lemon(s)
  • 2 pinches of sugar
  • 10 small cucumber(s), sweet
  • 10 radishes
  • 2 shallots
  • 2 cloves garlic
  • 1 bunch of chives
  • 1 bunch of flat-leaf parsley

The right side dish for the barbecue season

Finely chop the chives and parsley. Cut the cucumbers, radishes, and shallots into tiny cubes (2 mm per side). Place the quark ingredients in a mixing bowl, press in the garlic clove, and add the lemon juice and sugar. (1 pinch is the amount you can grasp with three fingers: thumb, index, and middle finger.) Blend with a mixer. Add all the other chopped ingredients and mix everything gently but thoroughly. This makes a tasty accompaniment to baked or jacket potatoes, as well as ciabatta rolls or baguettes. It also makes a delicious side dish for anything grilled.
