A nice refreshing change with Tzatziki
Fry the dumplings in plenty of butter with the onions, turning occasionally. Any kind of dumplings, whether homemade, frozen, or ready-made, will work for this recipe. Meanwhile, put the yogurt in a small bowl. Grate the cucumber (you probably won’t need that much) and mix it into the yogurt. Tear the mint leaves into small pieces and add them. Press the garlic through a garlic press and add. Season with salt and pepper. Spoon the tzatziki onto the plates, arrange the dumplings on top, and crumble the goat cheese on top. Serve the warm dumplings and enjoy. This is a great recipe when you’re in a hurry. If you’re even short on time, you can replace the tzatziki with Philadelphia chives and stir in a bit of dried mint.
