'Scooped' dumplings

Ingredients for 4 servings:

  • 2 rolls
  • some milk
  • 2 eggs
  • 1 pinch of salt
  • Flour as needed, approx. 200 g

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the rolls (they can also be dry ones) in the milk until completely soaked. Then add the eggs and a pinch of salt and mix well with a dough hook. Continue adding flour until you have a sticky dough that you can “scrape” (spoon) into. If the dough is too stiff, add more milk. Drop the dumplings into boiling salted water and let them sit for about 10 minutes. When cooked, they will float to the top. They are delicious as a side dish to savory dishes, or as a dessert with cinnamon sugar or compote.
