Scrambled eggs "high matra"

Ingredients for 2 servings:

  • 5 eggs
  • 4 slices of bread (mixed bread, e.g., gray bread, double bread, Oberländer, etc.)
  • 125 g smoked bacon, alternatively ready-made ham nuggets or similar.
  • 2 garlic cloves
  • Salt
  • Oil for frying, e.g. rapeseed oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

or simply called mud!

Dice the bread. Crack the eggs into a small bowl. Do not mix! Crush the garlic cloves. Cut the smoked bacon into small cubes. Toast the bread in a large pan until browned and crispy. Add the smoked bacon and garlic, and lightly brown the bacon as well. Add 2 pinches of salt. Remove the pan from the heat, add the eggs, and cook until the egg is cooked to your desired doneness, stirring constantly. You can play with the heat a bit, placing the pan on the stovetop and then removing it again. You can also leave some of the bread without the egg; this will produce crispy pieces of bread.
