Seitan and onions with rice

Ingredients for 4 servings:

  • 300 g brown rice
  • 250 g seitan
  • 4 tbsp oil
  • 3 onions
  • 2 garlic cloves
  • 1 piece(s) ginger (small piece)
  • 1 lime(s)
  • 2 oranges
  • 2 tbsp honey
  • 200 ml vegetable stock

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Prepare the rice according to the package instructions. Dice the seitan. Peel the onions and slice them into thin strips. Peel and finely chop the garlic and ginger. Heat the oil in a wok (or a large, heavy pan). Fry the seitan in it. Remove the wok from the heat. Remove the seitan from the oil with a slotted spoon, letting it drain over the wok, and then keep warm. Return the wok to the heat and reheat the oil. Fry the onions, garlic, and ginger in it. Add the vegetable stock. Squeeze the oranges and limes and add the juice, along with the honey, to the vegetable stock. Add the cooked rice and sauté for a few minutes. Stir in the fried seitan. Serve immediately.
