Ingredients for 1 servings:

  • 300 g tomatoes
  • 100 g chili pepper(s), fresh red
  • 2 garlic cloves
  • 1 onion(s)
  • 2 tbsp sugar
  • ½ tsp coriander, ground
  • 2 tsp lime juice
  • 2 tbsp oil
  • salt and pepper

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Fiery!

Blanch the tomatoes and peel them. Cut the flesh into chunks, removing the seeds and stems. Wash, deseed, and finely chop the chilies. Peel and roughly chop the garlic and onion. Place everything in a blender and puree until smooth. Heat the oil, add the chili-tomato puree, and cook over medium heat for 3 minutes, stirring continuously. Season the sauce with coriander, sugar, salt, and pepper. Allow to cool, then cover and refrigerate for 3 hours. Season with lime juice and salt before serving.
