Seitan with brandy sauce, Greek style

Ingredients for 4 servings:

  • 500 g seitan (homemade) marinated in gyros spice
  • 1 bell pepper(s), red
  • 1 bell pepper(s), green
  • 3 tbsp ajvar
  • 3 tbsp yogurt
  • 200 g cheese, grated
  • 2 tbsp brandy
  • 1 clove(s) garlic
  • salt and pepper
  • Paprika powder
  • oregano
  • Thyme
  • possibly cumin
  • possibly marjoram
  • possibly coriander

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Briefly fry the seitan and set aside. Peel and slice the bell peppers. Finely dice the garlic. Fry the bell peppers and garlic in a pan. Add the fried seitan, ajvar, and brandy to the pan and bring to a boil. Stir in the yogurt and season to taste. Transfer everything to a baking dish and sprinkle with the cheese. Bake in the oven (convection oven preheated to approximately 170°C) for about 20 minutes (until the cheese turns a nice golden yellow). Serve with tzatziki, tomato salad, Greek coleslaw, French fries, vegetable rice, etc.
