Ingredients for 2 servings:
- 2 balls of mozzarella
- 4 large tomatoes
- 2 cloves garlic
- Olive oil, for sautéing the onions
- 3 slices of rusk (wholemeal rusk)
- 1 bunch of flat-leaf parsley
- 2 onions
- some salt
- some black pepper, freshly ground
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with garlic
Dice the onions. Finely crumble the rusks. Finely chop the parsley. Finely chop the garlic. Slice the tomatoes and mozzarella. Preheat oven to 200°C fan-assisted oven with the grill switched on (level 2). Sauté the onions and garlic in plenty of olive oil until translucent. Add the rusk crumbs and chopped parsley. Season lightly with salt and pepper. Alternate the tomato and mozzarella slices in a shallow ovenproof dish. Season generously with salt and freshly ground pepper. Spread the onion and crumb mixture on top. Bake in a preheated oven (or combo microwave) at 200°C (with the grill switched on) for about 10-15 minutes. Serve with toasted brown bread.
