Semolina Casserole with Cherries

  • 500 g Pitted cherries (from the jar)
  • 0,5 liter Milk
  • 1 pinch Salt
  • 100 g Semolina
  • 4 Pc. Eggs
  • 100 g Butter
  • 50 g Sugar
  • Untreated lemon peel
  • 100 g Chopped walnuts
  • 20 g Flaked almonds
  1. Drain the cherries from the glass. Bring the milk to the boil with the salt, pour in the semolina and let it soak for about 15 minutes over low heat.
  2. Separate the eggs. Mix 75 g butter with the sugar and egg yolks until creamy. Add the lemon peel. Mix the cream with the warm semolina.
  3. Preheat the oven to 220 ° C. Grease a baking dish and sprinkle with breadcrumbs.
  4. Beat the egg whites until stiff and fold into the semolina mass.
  5. Pour the semolina dough into the mold in layers with the cherries. Spread the chopped walnuts on the tables. The top layer is semolina batter. Spread the remaining butter in flakes on top, top with the flaked almonds. Bake on the middle rack for about 30 minutes.
