Ingredients for 4 servings:
- 375 g whole wheat semolina
- 650 ml milk
- 600 ml water
- 40 g butter
- 100 g grated cheese (e.g. Gouda or Emmental)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Bring the milk and water to a boil, stir in the semolina, and bring back to a boil. Season with salt. Spread the mixture on a board rinsed with cold water, about 1 cm thick, and let cool. Cut out square or round cookies. Place them in a well-greased ovenproof dish, forming a brick pattern. Spread the butter and cheese over the cookies. Preheat the oven to 250°C (480°F), then bake on the middle rack for 15 minutes, then bake on the top rack for 10 minutes until golden brown.
