Ingredients for 5 servings:

  • ½ liter of milk
  • 1 vanilla pod(s)
  • 2 eggs
  • 300 g sugar
  • 8 tbsp semolina
  • ½ liter of milk
  • 1 pinch of salt
  • 125 ml cream
  • 3 tbsp sugar
  • ½ tsp lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

With a delicate vanilla flavor. For anyone who enjoys semolina porridge.

For the semolina pudding, bring 1/2 liter of milk and 3 tablespoons of sugar to a boil in a saucepan. Then stir in 8 tablespoons of semolina. Add 1 pinch of salt, 125 ml of cream, 3 tablespoons of sugar, and 1/2 teaspoon of lemon juice. Stir well. For the milk and egg mixture, heat 1/2 liter of milk with the scraped vanilla pod until hot, then remove from the heat. Crack 2 eggs in a bowl and add the 300 g of sugar, one at a time, and beat until frothy. Once the milk has cooled slightly, mix the milk with the egg mixture. Mix the semolina pudding with the milk and egg mixture. Once the mixture has cooled, pour it into a running ice cream maker.
