Semolina pudding – cherry muffins

Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 100 g almond(s), coarsely ground
  • 1 egg(s)
  • 125 g sugar, brown or white
  • 80 ml vegetable oil or
  • 125 g butter
  • 175 ml milk or buttermilk
  • 1 cup of pudding (semolina pudding, ready-made product, 150 g)
  • 150 g cherry(s), fresh or from the jar
  • 3 tbsp almonds, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a bowl, thoroughly mix the dry ingredients (flour, baking powder, baking soda, and almonds). In another large bowl, crack the egg and whisk lightly. Then add the sugar, oil or butter, buttermilk or milk, the semolina pudding, and the cherries and mix everything briefly. Finally, add the dry ingredients and fold in gently. Stir only until the dry ingredients are moistened. Pour the batter into muffin tins (lined with paper cases) and sprinkle with the chopped almonds. Bake in a preheated oven at 180°C (160°C fan/convection oven) on the middle rack for about 20 minutes.
