Semolina soufflé

Ingredients for 6 servings:

  • 500 ml milk
  • 80 g semolina
  • 3 sheets of gelatin
  • 500 ml cream
  • 100 g sugar
  • Lemon(s) peel or orange peel

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the milk to a boil with the lemon or orange zest and sugar. Stir in the semolina and bring to a boil briefly while stirring. Remove the semolina from the heat. Dissolve the gelatin and add it. Wait until the mixture is just lukewarm. Then whip the cream until stiff peaks form and stir into the semolina mixture. Refrigerate until completely cool. Serve with a sauce, such as strawberry sauce, raspberry puree, chocolate sauce, or add fruit.
